The jackfruit and mushrooms inside these baked spring rolls make them taste great, and the crunch they give you without having to fry them is great. Great as an appetizer or healthy snack!

Ingredients: 1 cup jackfruit, shredded. 1 cup mushrooms, finely chopped. 1/2 cup carrots, grated. 1/2 cup cabbage, shredded. 2 cloves garlic, minced. 2 tbsp soy sauce. 1 tbsp sesame oil. 1 tsp ginger, minced. 1 tsp sriracha sauce. 12 spring roll wrappers. 1 tbsp cornstarch mixed with 2 tbsp water for sealing rolls.

Instructions: Warm the oven up to 190C 375F. Put sesame oil in a pan and heat it over medium-low heat. It will take one minute after you add the garlic and ginger. To make the mushrooms soft, add them and cook. Add cabbage, carrots, and jackfruit and mix well. For two to three minutes. Mix well after adding the soy sauce and sriracha. Take it off the heat and let it cool down. Put some of the filling on top of each spring roll wrapper. Fold the sides in and roll the dough up tightly. Seal the edge with the cornstarch mixture. Put the rolls on a baking sheet that has parchment paper on it. Flip the food over halfway through the 2025 minutes of baking, or until it is golden and crispy. Serve hot with the sauce of your choice.

Sonico is down and out and the mystery of how it happened must be explored!

The Review: Content: (please note that content portions of a review may contain spoilers) Though it took a bit to really get the gist of the last episode, it was a whole lot of fun to watch Sonico traveling, getting inspiration and just exploring different places far from home for awhile. There’s been a lot of focus on her life and the connections she has to so many people between work, school and personal life that seeing her take time for herself to explore was enlightening. It was also inspiring because you do realize that you spend so much of your time on the pursuits that you must get done as opposed to wanting to get done that you do miss out on things. But now Sonico is back, going through what she has to do and doing it all with a smile having gotten refreshed from the journey. But not everything will go smoothly…

The episode has her doing some of her usual routine at the cafe but it all goes badly when while in the changing room, she ends up falling and hurting herself, knocking herself unconscious as well. It’s done in a way that makes it look like a murder though, which is amusing, especially since everyone just stands and watches over her. What it opens up though is that since she’s pretty much out of the picture, we get the arrival of Fujimi’s younger sister Ena on the scene. And she insists that this is a mystery that must be solved, even though others are saying that it’s pretty plain and obvious what happened. But sometimes the introduction of a little doubt can go a long way to starting to explore other aspects of what may have happened, which is always fun for those that go into it with the right mindset.

The show goes into this kind of silly if simple mystery aspect with a smile and almost a wink as the various girls that are working there get taken in by Ena easily enough. And with Sonico asleep for the bulk of it, it lets them dominate. Which isn’t exactly bad, but I can’t say that I’m really all that interested in any of them and more just prefer the way they help to accentuate Sonico herself. Giving them their own episode certainly makes sense, but since it’s driven by Ena, it doesn’t actually do much for giving them more personality or showing who they are as opposed to just having a fun search for clues and answers. It all plays out in a simple form but in the end, there’s just not much there to this episode.

In Summary: While I can see a lot of people kind of being miffed about the previous episode, it’s ones like this that just make me tune out from events. The idea of putting Sonico to the side isn’t a bad one as you want to flesh out your cast a bit and you can’t always do it from the perspective of the lead since they need to define themselves. Unfortunately, what we get here is the cast of girls that are involved being lead around by Ena on a wild goose chase with no real worthy goal to it and nothing that helps to make any of them more engaging or interesting. If anything, the show turned me away from this episode because of Ena more than anything else. Still, considering how good the show has been this definitely fits the category of the one-off in a season that you just can’t get behind for a variety of reasons.
