This Fried Green Tomato and Halloumi Salad is a delightful combination of crispy green tomatoes, pan-fried halloumi cheese, and a mix of fresh greens. It's a perfect blend of textures and flavors with a tangy balsamic vinaigrette dressing.
Ingredients: 2 medium green tomatoes. 200g halloumi cheese. 1 cup breadcrumbs. 2 eggs. 1/2 cup flour. Salt and pepper to taste. 1/4 cup olive oil. 4 cups mixed greens. 1/4 cup balsamic vinaigrette dressing. 1/4 cup cherry tomatoes, halved. 1/4 cup red onion, thinly sliced. 1/4 cup fresh basil leaves. 1/4 cup crumbled feta cheese.
Instructions: The green tomatoes should be cut into rounds that are 1/2 inch thick. Mix the eggs together in a bowl. Put the breadcrumbs and a little salt and pepper in a different bowl. In a third bowl, put the flour. Then, coat each tomato slice with flour, then egg, and finally breadcrumbs, pressing them down gently to stick. In a pan, heat the olive oil over medium-high heat. The tomato slices should be fried for two to three minutes on each side, or until they are golden brown and crispy. Take it off and let it dry on paper towels. The halloumi cheese should be cut into slices that are 1/4 inch thick. Place the halloumi slices in the same pan and cook them for one to two minutes on each side, until they get a little brown. Put the mixed greens, cherry tomatoes, red onion, and fresh basil leaves in a large salad bowl. Fry some green tomato slices and put them on top of the salad. Spread the balsamic vinaigrette dressing on top of the salad. Add some broken up feta cheese on top. Gently toss the salad to mix all the ingredients together. Serve right away and enjoy!
