These vegan strawberry rhubarb oatmeal bars are a delightful treat that combines the sweetness of strawberries with the tartness of rhubarb, all nestled in a wholesome oat crust and topping.
Ingredients: 1 cup rolled oats. 1 cup almond flour. 1/2 cup maple syrup. 1/4 cup coconut oil, melted. 1 tsp vanilla extract. 1/2 tsp cinnamon. 1/4 tsp salt. 1 1/2 cups chopped strawberries. 1 1/2 cups chopped rhubarb. 2 tbsp cornstarch. 2 tbsp lemon juice.
Instructions: Warm the oven up to 350F 175C and put parchment paper in an 8x8-inch baking pan. Put the rolled oats, almond flour, maple syrup, melted coconut oil, vanilla extract, cinnamon, and salt in a large bowl and mix them all together until they are well mixed. Two-thirds of the oat mixture should be pressed into the pan's bottom to make a crust. Put the chopped rhubarb and strawberries, cornstarch, and lemon juice in a different bowl. Cover the oat crust with the fruit mix. Add the rest of the oat mixture on top of the fruit. It should be baked in a hot oven for 35 to 40 minutes, or until the top is golden brown and the fruit starts to bubble. Let it cool all the way down before cutting it into bars.
