Ingredients: 4 medium potatoes, thinly sliced. 2 tablespoons olive oil. 2 cloves garlic, minced. 1/4 cup grated Parmesan cheese. 1 tablespoon fresh thyme leaves. Salt and pepper to taste.
Instructions: Preheat the oven to 375F 190C. In a small bowl, mix olive oil, minced garlic, grated Parmesan cheese, and fresh thyme leaves. Layer the thinly sliced potatoes in stacks, brushing each layer with the olive oil mixture and seasoning with salt and pepper as desired. Place the potato stacks in a muffin tin or on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until the potatoes are golden brown and crispy on the edges. Serve hot, garnished with additional Parmesan cheese and thyme leaves if desired.
