Ingredients: 2 cups cooked quinoa. 1/2 cup gluten-free breadcrumbs. 1/4 cup grated zucchini. 1/4 cup finely chopped red bell pepper. 2 green onions, thinly sliced. 2 cloves garlic, minced. 1/4 cup chopped fresh parsley. 1/4 cup grated Parmesan cheese make sure it's gluten-free. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 2 large eggs. 2 tablespoons olive oil, for frying.
Instructions: In a large mixing bowl, combine the cooked quinoa, gluten-free breadcrumbs, grated zucchini, chopped red bell pepper, sliced green onions, minced garlic, fresh parsley, grated Parmesan cheese, salt, and black pepper. In a separate bowl, whisk the eggs and then add them to the quinoa mixture. Stir until everything is well combined. Heat olive oil in a large skillet over medium heat. Form the quinoa mixture into patties, about 1/4 cup of mixture for each patty. Place the patties in the heated skillet and cook for about 4-5 minutes on each side, or until they are golden brown and crispy. Remove the quinoa cakes from the skillet and place them on a paper towel-lined plate to remove excess oil. Serve the gluten-free crispy quinoa cakes as a delicious side dish for lunch or dinner.
