These Mind-Blowing Mac 'n' Cheese Donuts are a delicious twist on classic mac 'n' cheese. They are crispy on the outside and cheesy on the inside, with a hint of bacon and jalapeños for extra flavor. Perfect for indulgent snacking or a unique party appetizer!
Ingredients: 2 cups cooked macaroni. 1 1/2 cups shredded sharp cheddar cheese. 1/2 cup grated Parmesan cheese. 1/2 cup milk. 1/4 cup unsalted butter. 1/4 cup all-purpose flour. 1/4 cup breadcrumbs. 1/4 cup grated mozzarella cheese. 1/4 cup diced cooked bacon. 1/4 cup chopped fresh parsley. 1/4 cup diced scallions. 1/4 cup diced pickled jalapeos. 1/4 cup diced red bell pepper. 2 large eggs. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/4 teaspoon paprika. 1/4 teaspoon garlic powder. Oil for frying.
Instructions: In a large mixing bowl, combine the cooked macaroni, shredded cheddar cheese, and grated Parmesan cheese. In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes, or until the mixture is smooth and golden brown. Gradually whisk in the milk and cook until the mixture thickens, about 2-3 minutes. Pour the milk mixture over the macaroni and cheese mixture and stir to combine. Stir in the breadcrumbs, mozzarella cheese, diced bacon, chopped parsley, diced scallions, diced jalapeos, diced red bell pepper, eggs, salt, black pepper, paprika, and garlic powder. Mix until well combined. Heat the oil in a deep fryer or large heavy pot to 350F 175C. Using a spoon or ice cream scoop, drop spoonfuls of the mac 'n' cheese mixture into the hot oil and fry until golden brown, about 3-4 minutes. Remove the mac 'n' cheese donuts from the oil and drain on paper towels. Serve the donuts hot, garnished with extra grated Parmesan cheese, if desired.
