Ingredients: 2 large eggs. 2 oz cream cheese, softened. 1/4 cup almond flour. 1/4 tsp vanilla extract. 1/4 tsp cinnamon. 2 tbsp powdered erythritol. 1/4 cup ricotta cheese. 1/4 tsp orange zest. 1/4 tsp vanilla extract. 1 tbsp chopped dark chocolate 85% cocoa or higher. 1 tbsp chopped pistachios. Whipped cream optional. Fresh berries optional.
Instructions: In a blender, combine the eggs, cream cheese, almond flour, vanilla extract, cinnamon, and powdered erythritol. Blend until smooth. Heat a non-stick skillet over medium-low heat. Pour a small amount of the batter into the skillet and swirl it around to create a thin crepe. Cook for about 2 minutes or until the edges start to lift. Flip and cook for an additional 1-2 minutes. Repeat with the remaining batter to make 4 crepes. In a bowl, mix together ricotta cheese, orange zest, and vanilla extract. Spread a portion of the ricotta mixture onto each crepe.
