Potato, Pumpkin and Buffalo Cheese Croquettes Recipe.

With love from Brazil (I'm sure, I'm just assuming).

Crisha sends me this recipe for croquettes, which I may or may not cook sooner or later. Also it should be known, that Crisha bribes people with food, and it actually works. Wholly talented our Crisha is.

Boil 3 potatoes and 200 grams of pumpkin. In another pan, fry up some onion, carrot and garlic. Add salt, oregano, pepper and 'Italian seasoning' To this mixture, add chopped up buffalo cheese. Mash potato and pumpkin, and then add to the other mixture. Roll mixture into into balls, drop into egg, then roll in bread crumbs. (optional, add pepper and herbs in the bread crumbs). Fry up balls in a saucepan filled with oil.
