Week THREE A busy couple of days this week, as these desserts have several components each. The large Fiesta tart had an almond sweet paste base with hazelnut chocolate feuilletine coffee layer, star anise cremeux, and a chiboust coffee cream. It was garnished with marzipan coffee beans, caramelized almonds, crispy pearls, cocoa powder, glaze, disco dust, and chocolate feathers. WHEW. We made a couple of verrines as well. The chocolate orange verrine had a chocolate cremeux base, orange vanilla montee, orange marmalade, chocolate streusel, orange segments, and chocolate decorations. The cream cheese mousse verrine had a japonaise base and insert, a milk chocolate caramel, another streusel, fennel mint salad, apple chips, and apple jelly. We made some similar desserts in shallow 3" ring molds and topped them with whole apple chips.
