That Picture That Doesn't Speak A Thousand Words Meal - Done I find it really hard to photograph Indian food. Most of our food is yellow or brown simply because of the spices we use. Also a lot of our food is curry based or then our veggies are coated with masala so it's hard to see the hero ingredient But still, I plod along simply because even though it may not be easy to plate, it tastes fantastic Clockwise : 1. Those whole wheat parathas sharing space with that Salad of mine 2. That Simple Chicken Kheema Matar/Mince & Peas I tempered ghee with whole garam masala (black & green cardamoms, cloves, whole black pepper) onions & garlic. Once nicely browned, I added in tomatoes, salt, coriander powder, turmeric powder, red chilli powder, Kashmiri red chilli powder, garam masala powder & once mushy, I cooked chicken mince & peas in this till done 3. Those Unrecognizable Foofoo Ridge Gourds/Ram Toris I tempered seasoned mustard oil with mustard seeds, cumin seeds, curry leaves, onions & garlic. I added tomatoes, salt, fresh coriander, an onion-garlic spice mix /kanda lassun masala, tamarind pulp & cooked finely sliced ridge gourds in this till done 4. That North Indian Dhaba Style Dal I pressure cooked skinless split bengalgram/channa dal in salted water along with a big pinch of asafoetida (trust me you want to add this), turmeric powder, onions & tomatoes. Once done, I left to simmer along with fresh coriander I tempered ghee with cumin seeds, curry leaves, green chillies, garlic, red chilli powder & Kashmiri red chilli powder & poured into the simmering lentils 5. That Freshly Steamed Rice This plate of food represents my life. It may not always seem pretty but oh my, how beautiful it tastes & that's what really matters.
