Corn butter farro from @smittenkitchen with some marinated shrimp. I was super excited to make this when it was first posted. And I needed to make it while corn is still in season. I finally had all the ingredients (semi-pearled farro was harder to find than I thought) so tonight was the night. It’s a pretty easy recipe, for instance I love it when I just have to slice onions and garlic instead of dice. And the corn butter was delicious. But you leave half the corn in the pot with the farro to cook for 20-30 minutes and I found it got tough and chewy. Maybe it was my corn. But I think if I make this again, I’ll take all the corn out and make it into corn butter. Let the farro cook with the onions, etc. then add all the corn butter in at the end. I thought some shrimp would go nicely and I wanted something a little acidic to go with the creamy farro. So I mixed up a marinade with rice vinegar, garlic, miso, and ginger and marinated the shrimp while the farro cooked. Then I just sautéed them.
