Ingredients: 1 cup natural peanut butter. 1/2 cup honey or maple syrup. 1 large egg. 1 teaspoon vanilla extract. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup almond flour. 1/4 cup gluten-free oat flour. 1/4 cup mini chocolate chips.
Instructions: Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Put the peanut butter, honey or maple syrup, egg, and vanilla extract in a bowl and mix them together. Mix it well until it's smooth. Combine the almond flour, oat flour, baking soda, and salt with the wet ingredients. Mix it together until a dough forms. It's okay to add the little chocolate chips. Take small amounts of dough and roll them into balls that are 1 inch across. Cover the baking sheet with foil and put them on it. Press down gently on each cookie with a fork to make a cross pattern. Put it in an oven that is already hot and bake it for 8 to 10 minutes, or until the edges turn golden. After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way down.
