Ingredients: 1 cup all-purpose flour. 2 eggs. 1 1/2 cups milk. 2 tablespoons sugar. 1/4 cup unsweetened cocoa powder. 2 tablespoons Kahlua coffee liqueur. 1/4 cup heavy cream. 1/4 cup powdered sugar. 1/2 teaspoon vanilla extract. 1/4 cup strong brewed coffee. 1/2 cup semi-sweet chocolate chips. 2 tablespoons unsalted butter. 1/4 cup whipped cream. Powdered sugar for dusting. Chopped chocolate-covered coffee beans optional, for garnish.
Instructions: In a blender, combine the flour, eggs, milk, sugar, cocoa powder, and Kahlua liqueur. Blend until smooth. Heat a non-stick skillet over medium heat and add a small amount of butter to grease the pan. Pour a small amount of the crepe batter into the skillet, swirling it around to create a thin crepe. Cook for about 2 minutes, then flip and cook for another 1-2 minutes. Repeat with the remaining batter to make multiple crepes. In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Set aside. In a saucepan, heat the brewed coffee and chocolate chips over low heat, stirring until the chocolate is fully melted and the mixture is smooth. Remove from heat and let it cool slightly. Spread a generous spoonful of the coffee-chocolate mixture onto each crepe, followed by a dollop of the whipped cream. Roll up the crepes and place them on a serving plate. In a separate saucepan, melt the remaining chocolate chips and butter over low heat, stirring until smooth. Pour this chocolate glaze over the filled crepes.
