El cobayo es un pequeño roedor de los andes ecuatorianos y peruanos. En otros países es común que se le cuide como mascota o se le utilice en pruebas de investigación biomédica, pero en la gastronomía ecuatoriana se lo cocina con sal, cocido o frito, junto con papas cocidas y salsa de maní.
