Co-Built Motorcycles of Oxford, England builds flat track motorcycles. They also race them, as documented in this video. Check out their site to see the truly excellent bikes they're building, specializing in frame and exhaust production but fabricating other parts from machined components right down to steel hot shoes. Take a good look at the custom exhausts. Geoff is a F1 car exhaust fabricator with BMX frame building roots, so he welds some seriously beautiful pipes.

Great video made by Dael Poulter. I really appreciate a small independent rider based company like this, you can tell these guys do it for the love. And the magic they talk about happening under the lights at their local flat tracks, anyone who's been to the races can understand that sentiment. Having been to the Indy Mile for flat track racing here in the states and to speedway racing at Hammarby Speedway in Sweden, I can attest to the magic. If you get the chance to go the races, I highly recommend it.
