Muffins: -Mix together in a bowl with a fork until not too lumpy(or throw in a blender): 3 egg whites 2T unsweetened almond/coconut milk 1/2 scoop protein powder (vanilla or chocolate, depending on what you want to add) 2oz cooked then peeled sweet potato(eat your peels, folks!) 1/4t baking powder 1/4t cinnamon Half a banana mashed. -To that mixture, stir in 1/4c uncooked oats(do NOT grind like the other recipes will call for, just stir in). Once mixed you can add in some berries or unsweetened chocolate chips or nuts…or leave plain and top with almond/peanut butter. -Scoop into greased muffin tins, cook 375 for 8-15min until fork/toothpick come out clean. As previously stated, you can replace all milk sources with water if needed. This topping on mine here is sweet potato mixed with 2T almond butter.
