A delightful parfait featuring baked orange-flavored donut holes layered with creamy vanilla yogurt, crunchy granola, and fresh citrusy orange segments.
Ingredients: 1 cup all-purpose flour. 1/2 cup sugar. 1 teaspoon baking powder. 1/4 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup orange juice. 1/4 cup melted butter. 1 large egg. 1 teaspoon vanilla extract. 1/2 cup powdered sugar for coating. 2 cups vanilla yogurt. 1 cup granola. 1 cup fresh orange segments. Mint leaves for garnish.
Instructions: Warm the oven up to 350F 175C and grease a mini muffin tin. Mix the flour, sugar, baking powder, baking soda, and salt in a bowl with a whisk. Break up the butter and add it to the dry ingredients along with the egg and vanilla extract. Don't mix any further than that. Fill up each mini muffin tin cup about two thirds of the way to the top with batter. If you stick a toothpick in it and it comes out clean, it's done. Let the donut holes cool down a bit. Cover the donut holes in powdered sugar while they are still warm. Place vanilla yogurt, granola, and baked orange donut holes in serving glasses. Add fresh orange slices on top, and then add mint leaves as a garnish. Your Baked Orange Donut Holes Parfait is ready to eat right away.
