Ingredients: 1 cup creamy peanut butter. 1/2 cup unsalted butter, softened. 1/2 cup granulated sugar. 1/2 cup packed brown sugar. 1 large egg. 1 teaspoon vanilla extract. 2 cups all-purpose flour. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup red and green candy-coated chocolate pieces.
Instructions: Preheat your oven to 375F 190C and line a baking sheet with parchment paper. In a large mixing bowl, beat the peanut butter, softened butter, granulated sugar, and brown sugar until creamy and well combined. Add the egg and vanilla extract to the mixture, and continue to beat until fully incorporated. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Fold in the red and green candy-coated chocolate pieces. Using your hands, roll the dough into 1-inch balls and place them on the prepared baking sheet. Flatten each ball slightly with the back of a fork, creating a crisscross pattern on top. Bake the cookies in the preheated oven for 8-10 minutes or until the edges are lightly golden. Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
