For about two dozen cookies:

3 c. all-purpose flour

2/3 c. natural cocoa powder

½ tsp. baking powder

1/2 tsp. kosher salt

1 c. granulated sugar

1 c. light brown sugar, packed

1 c. [unsalted] butter, softened

2 large eggs

½ tsp. pure vanilla extract

8 oz. miniature marshmallows, frozen (vegan marshmallows work too!)

Preheat oven to 400F. In a medium mixing bowl, combine flour, cocoa, baking powder., and salt. Set aside.

In a standing mixer, cream together the sugars and butter; add eggs and vanilla until the mixture is well-incorporated. Add the flour mixture -- a half cup at a time -- and mix at low speed until all of the flour mixture has been incorporated.

Gather about 1 1/2 tablespoon of dough in the palm of your hand. Form a ball, and then flatten it. Put 5-6 marshmallows in the center.

Cover over completely by encasing them with the dough. Roll into a smooth ball. Place balls on lined baking sheets, at least 2" apart, and lightly flatten it.

Bake 8-10 minutes. Let it cool to touch before eating.
