삼계탕(Samgyetang, Ginseng chicken soup of Korea)
The first of the three dog days is called 초복(Chobok). the second of the three dog days is called 중복(Jungbok). And the last of the three dog days is called 말복(Malbok). 초복 is 30 days after 하지. 중복 is 40 days after 하지. And 말복 is after 10 days from 입추. 삼복(Sambok) is the hottest season in the summer, and the "삼복더위" refers to the extremely hot weather.
On the Dog Day, special food is prepared for rejuvenating the body. In modern times, people usually eat 삼계탕(Samgyetang). 삼계탕 is a dish that is boiled in a pot with plenty of water, with put glutinous rice, garlic, and jujube wrapped in clean cloth in the inside of a young chicken. Some people season it with salt and drink only the soup or add seasoned meat to the soup.
Since 삼계탕 is so popular, fusion 삼계탕 with various ideas is being made these days. It is basic to add antler, chestnuts, and pine nuts, and there is also 삼계탕 with abalone or octopus. 삼계탕, which includes a whole root of red ginseng, has also emerged. There are also "한방 삼계탕", which contains all kinds of medicinal herbs, "해물 삼계탕", which includes octopus, crab, and abalone, and "대나무통 삼계탕," where chickens are steamed in bamboo barrels, not earthen pots.
삼계탕 contains plenty of healthy ingredients. Garlic and ginseng are representative ingredients, and jujube and chestnuts are also added. Peanut powder or perilla seeds are sometimes added to enhance the savory and thick taste.
Also, on the Dog Day, some people eat red bean porridge because it is believed that they do not suffer from heat and disease if they eat red bean porridge. people usually eat oriental melon and watermelons, and sometimes go into mountain valleys to wash their feet in water to avoid the heat. In coastal areas, sand baths can be used to overcome the heat.
