These Chickpea Caesar Collard Wraps are a fresh and satisfying vegan lunch option. Packed with protein-rich chickpeas, creamy avocado, and tangy Caesar dressing, they make for a flavorful and nutritious meal. Collard greens serve as a sturdy and nutritious alternative to traditional wraps.
Ingredients: 1 can chickpeas, drained and rinsed. 1 tablespoon olive oil. 1 teaspoon garlic powder. 1/2 teaspoon onion powder. Salt and pepper to taste. 4 large collard green leaves. 1 cup cherry tomatoes, halved. 1 avocado, sliced. 1/4 cup vegan Caesar dressing. 2 tablespoons nutritional yeast. Lemon wedges for serving.
Instructions: In a skillet, heat olive oil over medium heat. Add chickpeas, garlic powder, onion powder, salt, and pepper. Cook until chickpeas are lightly browned, about 5-7 minutes. Remove chickpeas from heat and set aside. Prepare collard green leaves by removing the tough stems and blanching in boiling water for 30 seconds. Immediately transfer to an ice bath to stop cooking. Pat dry with paper towels. Lay collard green leaves flat and divide chickpeas, cherry tomatoes, avocado slices, and vegan Caesar dressing among them. Sprinkle nutritional yeast over the filling. Roll each collard leaf tightly, tucking in the sides as you go. Slice each wrap in half diagonally and serve with lemon wedges.
