A refreshing and flavorful salad perfect for summer gatherings or a light meal. This Summer Chicken Macaroni Salad combines tender chicken, crisp vegetables, and creamy dressing for a satisfying dish.
Ingredients: 2 cups cooked macaroni noodles. 1 cup cooked chicken breast, diced. 1/2 cup diced celery. 1/4 cup diced red onion. 1/2 cup diced bell pepper. 1/4 cup diced cucumber. 1/4 cup diced carrots. 1/4 cup chopped fresh parsley. 1/4 cup mayonnaise. 2 tablespoons plain Greek yogurt. 1 tablespoon Dijon mustard. 1 tablespoon apple cider vinegar. Salt and pepper to taste.
Instructions: Cooked macaroni noodles, diced chicken breast, celery, red onion, bell pepper, cucumber, carrots, and parsley should all be put in a large bowl together. Mix Greek yogurt, Dijon mustard, apple cider vinegar, salt, and pepper in a small bowl with a whisk. Toss the macaroni and dressing together until everything is well mixed. Put it in the fridge for at least 30 minutes before serving so the flavors can mix. Enjoy! Serve cold.
