For that you get the most glorious plate of Char Kway Teow, brimming with wok hei and bursts of crispy Che Yau Cha (deep fried pork fat cubes) plus lup cheong, bean sprout, egg and chives. So successful has Uncle’s Tony’s cooking been, now youngest son Albert has set up Wokin’It in West Harbour and the elder son Damien has Uncle Lai’s at Mt Garatt, Brisbane. When you've got a man-cold and desperately trying to shake it off, #24 at Malaysian Noodles & Rice will (almost) do the trick. The Char Kway Teow is Uncle Tony Lai’s signature dish famous for its wok hei, crispy che you char (crispy pork fat cubes), lup cheong (Chinese sausage), and ingredients of egg, squid, prawn, chives and bean sprouts all enhanced in cooking flavour with lard. Uncle Lai has always been aided by wife Aunty Alice. We tend to overlook the fact the Mee Goreng here is equally good as well as the Wat Tan Hor. Uncle Lai has been so successful that son Albert is at Wokin’it, West Harbour. His mother confessed that Albert has tamed his wok hei to rival his Dad’s. Another son Damian has opened up Uncle Lai’s in Brisbane. Uncle Tony is still old school.
