A tasty vegan cake with a crunchy crust made of almonds and dates, a creamy cashew filling, and a sweet cherry topping.
Ingredients: 2 cups almonds. 2 cups dates, pitted. 3 cups cashews, soaked for 2 hours. 1 cup coconut oil, melted. 1 cup maple syrup. 1/2 cup lemon juice. 1 teaspoon vanilla extract. 1/2 teaspoon salt. 2 cups cherries, pitted.
Instructions: In a food processor, blend almonds until finely ground. Add dates and blend until a sticky dough forms. Press the dough into the bottom of a lined cake pan to form the crust. In a blender, combine cashews, coconut oil, maple syrup, lemon juice, vanilla extract, and salt. Blend until smooth. Pour half of the cashew mixture over the crust. Add cherries to the remaining cashew mixture in the blender and blend until smooth. Pour cherry cashew mixture over the first layer in the cake pan. Smooth the top and freeze for at least 4 hours or until set. Slice and enjoy!

These Cherry Cheesecake Brownies combine the rich fudgy goodness of brownies with a creamy cheesecake layer and sweet cherry topping for a decadent dessert treat.
Ingredients: 1 box brownie mix. Ingredients listed on brownie mix box typically eggs, oil, water. 8 oz cream cheese, softened. 1/3 cup granulated sugar. 1 egg. 1 tsp vanilla extract. 1 cup cherry pie filling.
Instructions: Warm the oven up to 175F 350C. Follow the directions on the brownie mix package to make it. Smooth the brownie batter out in a 9x13-inch baking pan that has been greased. Mix the sugar, egg, vanilla extract, and cream cheese in a different bowl until the mixture is smooth and creamy. Cover the brownie batter with the cheesecake mix. Spread the cherry pie filling on top of the cheesecake layer and use a knife to make it look like marble. After the oven is hot, bake for 35 to 40 minutes, or until the middle is set. Let it cool all the way down before cutting it into squares.
