Ingredients: 2 cups frozen cherries. 1/2 cup granulated sugar. 2 tablespoons cornstarch. 1 tablespoon lemon juice. 1/2 teaspoon almond extract. 1 vegan pie crust store-bought or homemade.
Instructions: Warm the oven up to 190C 375F. Put sugar, cornstarch, lemon juice, and frozen cherries in a medium saucepan. Stir the mixture all the time over medium heat for about 5 to 7 minutes, or until it gets thicker. Take the food off the heat and mix in the almond extract. Let the filling cool down a bit. Roll out the pie crust and put it in a pie dish. Then, put the cherry filling into the crust. Cover with more pie crust or use strips of crust to make a lattice pattern. Take off any extra crust and crimp the edges to seal. Cut a few holes in the top crust so that the steam can escape. Put it in the oven for 40 to 45 minutes, or until the crust is golden brown and the filling boils over. Let the pie cool down before you serve it.
