One of my favorite culinary blogs and chef is Chef Jason Peru of Trinidad and Tobago. This blog is very organized and not overwhelming. You are not bombarded by words and recipes right off the bat. However you are greeted with not only introductory professional pictures but personal pictures of around the island . He mentions ingredients that are locally sourced and tips on how and where to find them. He definitely brings out all the flavors and history of the island in his dishes. Chef Peru does this in a fun and delightfully appealing way. He portrays traditional and new twists on current recipes .I appreciate this and would like to emulate this to continue to educate and pass down traditional foods and culture in a exciting and refreshing more modern way to the future generations. The culture is infused into every aspect of his work and he definitely puts our little islands on the map in a BIG way.
