This beef pot pie with cheddar onion biscuits is a hearty and comforting meal that is great for a cold night. Tender beef chunks are cooked with vegetables and creamy cheddar cheese. On top are fluffy biscuits that have onion and sharp cheddar flavors added to them.
Ingredients: 1 1/2 lbs stew meat, trimmed and cubed. 1/2 cup all-purpose flour. 1/4 cup vegetable oil. 1 cup beef broth. 1 cup water. 1 cup diced onion. 1 cup diced carrots. 1 cup diced celery. 2 cloves garlic, minced. 1 tsp dried thyme. 1 tsp dried rosemary. Salt and black pepper to taste. 2 cups frozen peas. 1/2 cup heavy cream. 1 cup shredded cheddar cheese. 1 tube refrigerated biscuit dough.
Instructions: Warm the oven up to 190C 375F. Toss the stew meat with flour in a large bowl until it is well covered. Put vegetable oil in a large skillet and heat it over medium-high heat. All sides of the stew meat should be browned. Put the meat that has been browned in a Dutch oven. As well as onion, carrots, celery, garlic, thyme, rosemary, salt, and pepper, add beef broth and water. Bring to a boil, then lower the heat and let it cook for an hour and a half to two hours, or until the meat is soft. Add heavy cream and frozen peas and mix well. For an extra 5 minutes, cook. Take it off the heat and add the shredded cheddar cheese. Mix it in until it melts. Open the tube of biscuit dough that has been frozen and put the biscuits on top of the beef mixture in the Dutch oven. After the oven is hot, bake the biscuits for 15 to 20 minutes, or until they are golden brown and fully cooked. Enjoy while hot!
