However, the institutional research tells a different story. When you look past the marketing and into the actual data, from universities, the United Nations, and peer reviewed journals. The case for lab-grown meat starts falling apart.

A study led by researcher Derrick Risner, at the UC Davis Department of Food Science and Technology. Conducted a full life cycle assessment of cultivated meat production. They measured the energy required, and greenhouse gases emitted at every stage. Then compared it directly to conventional beef.
The carbon footprint potential of lab-grown meat, produced with purified growth media. Is 4 to 25 times greater than the average for retail beef. That's not a small gap. It's a collapse of the entire argument.
The reason comes down to how the cells are grown. Cultivated meat production relies on highly refined growth media. This is the nutrient mixture that feeds the cells, as they multiply. Purifying that media to the level required, is essentially a pharmaceutical process. One that is extraordinarily energy intensive.
Even the most efficient conventional beef production systems, reviewed in the study. Outperformed cultivated meat, across every scenario the researchers modeled.
The European Food Information Council, confirmed the same problem. While cultivated meat could theoretically use less land and water. It currently requires high energy inputs. The actual climate benefit, depends entirely on whether production shifts to renewable energy. That shift hasn't happened.
The sustainability argument doesn't hold up, under its own data. The industry is asking people to accept a product that produces more emissions, than the process it's supposed to replace.
53 Safety Hazards Identified by FAO and WHO
In April 2023. The Food and Agriculture Organization, of the United Nations and the World Health Organization. Published a 150 page report titled, Food Safety Aspects of Cell-Based Food. It was the first global food safety assessment of cultivated meat.
An expert panel reviewed all potential hazards, across four stages of production. Cell sourcing, cell growth, cell harvesting and food processing. They identified 53 potential sources of hazards.
The list includes contamination with heavy metals, microplastics, nanoplastics, allergens, chemical contaminants, antibiotics and prions. The report also flagged the growth factors and hormones used, to accelerate cell cultivation. These aren't inactive compounds. They trigger biological responses in the body. Some have been linked to metabolic disruption and the development of certain cancers.
The Center for Food Safety raised a related point. Cells grown outside a living animal, don't have a functioning immune system. In a bioreactor, there is no immune response. That means a high likelihood of bacterial or fungal growth. It also indicates a high likelihood of mycoplasma contamination, and other human pathogens growing alongside the meat cells.
Antibiotic usage across cultivated meat companies, has not been disclosed in any standardized way. Some companies have even engineered their cell lines, to be antibiotic resistant. Which implies they plan on using antibiotics during production, but don't want the meat cells affected.
The safety data isn't there yet. The hazard list from the two largest global food safety organizations. Is long enough to warrant serious questions, about what's being rushed to the market.
The Scientists Who Study Meat Aren't Sold
In 2023, a team led by researcher Farzana Choudhary. Published the first peer reviewed survey, of meat scientists' and their perceptions of cultivated meat. Available in the Applied Food Research Journal.
The respondents were 51 meat scientists. The people who study meat composition, safety, and production for a living. Their opinions matter mostly because they understand the biology. Particularly at a level, most consumers and most marketers do not.
76 percent, said society should not rely on this type of production. 61 percent, said the benefits of cultured meat are often grossly overstated. Another 61 percent, said there is not enough scientific evidence to prove its safety. Lastly, 58 percent, said a quick transition to cultivated meat could be risky.
Only six percent said they would purchase it regularly. Only six percent said they would pay a higher price for it.
When the people whose entire career is understanding meat, and even they don't trust the product. That should tell consumers something.
Follow the Money
The companies building lab-grown meat aren't small startups, who are operating out of garages. They are backed by some of the largest food corporations, and investors in the world.
Tyson Foods, has been investing in cultivated meat through Tyson Ventures, since 2018. Their first investment was in UPSIDE Foods, formerly known as Memphis Meats. Tyson increased its stake in 2020, then joined UPSIDE's $400 million Series C round. This was alongside Cargill, the Abu Dhabi Growth Fund and Bill Gates. That round pushed UPSIDE's valuation past $1 billion.
This is worth understanding, because it reframes what lab-grown meat actually is. It's not a grassroots movement to save the planet. It's a corporate investment strategy by the same companies, which already control conventional meat production. They're not replacing the system. They're hedging their position inside it.
Meanwhile, seven U.S. states. Including Florida, Alabama, Mississippi, Montana, Indiana, Nebraska and Texas. Have passed bans on the manufacturing, sale, or distribution of cultivated meat. Florida and Alabama moved first in 2024. Texas enacted a two year moratorium in September 2025.
As of April 2026, lab-grown meat was not being produced for consumption or sale, anywhere in the United States. The product that was supposed to be on every shelf by now, isn't on any.
