A rich and creamy soup with the subtle flavor of celery enhanced by the warmth of paprika-infused butter.
Ingredients: 1 bunch celery, chopped. 1 onion, chopped. 2 cloves garlic, minced. 4 cups vegetable broth. 1 cup heavy cream. 4 tablespoons unsalted butter. 1 teaspoon paprika. Salt and pepper to taste.
Instructions: Melt 2 tablespoons of butter over medium-low heat in a large pot. Cut up the onion, celery, and garlic and add them. For about 8 to 10 minutes, or until softened. Put in the vegetable broth and raise the heat. Keep cooking for another 15 to 20 minutes, until the vegetables are soft. Blend until smooth, either with an immersion blender or by adding small amounts at a time to a blender. Add heavy cream to the soup after putting it back in the pot. Add pepper and salt to taste. Melt the last two tablespoons of butter over low heat in a small saucepan. For one to two minutes, until it smells good, stir in the paprika. Put a spoonful of paprika butter in each bowl and serve the soup hot.
