Pineapple Jalapeño Preserves A sweet and spicy twist on traditional preserves, this recipe combines the tropical flavor of fresh pineapple with the heat of jalapeño peppers. Perfect for spreading on toast or as a unique topping for grilled meats. Ingredients: - 3 cups of diced fresh pineapple - 1 cup of thinly sliced jalapeño peppers - 1 cup of apple cider vinegar - 2 cups of granulated sugar - 2 tablespoons of lemon juice - 1 teaspoon of mustard seeds - 1/2 teaspoon of turmeric powder - 1 tablespoon of grated ginger - 2 cloves of finely chopped garlic Instructions: 1. In a large saucepan, combine the apple cider vinegar, granulated sugar, lemon juice, mustard seeds, turmeric powder, grated ginger, and chopped garlic. Bring it to a boil, then reduce the heat and simmer until the sugar dissolves completely. 2. Add the diced pineapple and sliced jalapeños to the saucepan. Simmer over medium heat until the pineapple softens and the liquid turns syrupy, about 20 minutes. 3. While cooking, sterilize your jars and lids by boiling them in water for at least 5 minutes. 4. Once the mixture is ready, carefully spoon it into the sterilized jars, leaving a little space at the top. Wipe the rims clean, secure the lids, and process the jars in a hot water bath for about 10 minutes. 5. After removing the jars from the bath, let them cool completely. Before storing in a cool, dark place, check to ensure the seals are secure. ñoPreserves
