Ingredients: 4 boneless, skinless chicken breasts. 1 cup long-grain white rice. 2 cups chicken broth. 1/4 cup soy sauce. 2 tablespoons olive oil. 2 tablespoons honey. 2 cloves garlic, minced. 1 teaspoon paprika. 1 teaspoon onion powder. 1/2 teaspoon black pepper. 1/2 teaspoon dried thyme. 1/4 teaspoon cayenne pepper. Salt to taste. Chopped green onions for garnish.
Instructions: To make the marinade, put soy sauce, honey, minced garlic, paprika, onion powder, black pepper, dried thyme, and cayenne pepper in a bowl and mix them together. Pour half of the marinade over the chicken breasts in a plastic bag that can be closed again. Put the bag closed and put it in a cooler or the fridge for at least 30 minutes. For better flavor, leave it there overnight. Set your grill or BBQ for camping on medium-high heat to get it ready. While the grill is getting hot, put the rice and chicken broth in a pot that can be used while camping. Once it starts to boil, lower the heat, cover, and let it cook for about 15 to 20 minutes. The chicken breasts should be grilled for 6 to 8 minutes on each side, or until they are fully cooked. While they are cooking, baste them with the rest of the marinade. Let the chicken rest for a few minutes after it's done cooking before cutting it up. Put the cooked rice on a plate and top it with the grilled chicken.
