These baked strawberry donuts are a guilt-free treat packed with whole grains and the natural sweetness of fresh strawberries. They make for a delightful and nutritious snack or breakfast option.
Ingredients: 1 cup whole wheat flour. 1/2 cup oat flour. 1/2 cup unsweetened applesauce. 1/4 cup honey. 1/4 cup Greek yogurt. 1/4 cup unsweetened almond milk. 1 egg. 1 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp vanilla extract. 1 cup fresh strawberries, diced.
Instructions: Preheat your oven to 350F 175C. In a mixing bowl, combine whole wheat flour, oat flour, baking powder, and baking soda. In another bowl, whisk together applesauce, honey, Greek yogurt, almond milk, egg, and vanilla extract until well combined. Pour the wet ingredients into the dry ingredients and mix until you have a smooth batter. Gently fold in the diced strawberries. Grease a donut pan and spoon the batter into the molds, filling them about 3/4 full. Bake in the preheated oven for 12-15 minutes or until a toothpick inserted into a donut comes out clean. Allow the donuts to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely. Once cooled, you can optionally drizzle them with a bit of honey or sprinkle with powdered sugar for extra sweetness. Enjoy your sweet, delicious, and healthy baked strawberry donuts!
