Ingredients: 2 large russet potatoes, peeled and grated. 1/4 cup finely chopped onion. 1/4 cup all-purpose flour. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 2 tablespoons vegetable oil. Non-stick cooking spray.
Instructions: Place the grated potatoes in a clean kitchen towel and squeeze out any excess moisture. In a large bowl, combine the grated potatoes, chopped onion, flour, salt, and black pepper. Mix well to form a thick batter. Preheat your waffle iron and brush it with vegetable oil or spray it with non-stick cooking spray. Spoon the potato mixture onto the preheated waffle iron, spreading it out evenly. Close the lid and cook for 10-12 minutes, or until the hashbrowns are golden brown and crispy. Carefully remove the hashbrowns from the waffle iron using a spatula and serve hot. You can garnish them with your favorite toppings like sour cream, chives, or ketchup.
