You can start your day off right with these tasty and healthy sweet potato breakfast boats. With a tasty mix of beans inside and avocado, salsa, and vegan sour cream on top, these are sure to satisfy your breakfast cravings.
Ingredients: 2 medium sweet potatoes. 1/2 cup black beans, drained and rinsed. 1/4 cup diced red bell pepper. 1/4 cup diced red onion. 1/4 cup corn kernels. 1/2 teaspoon ground cumin. 1/2 teaspoon smoked paprika. Salt and pepper, to taste. 2 tablespoons chopped fresh cilantro. 1 avocado, sliced. Salsa, for serving. Vegan sour cream, for serving.
Instructions: Preheat the oven to 400F 200C. Wash and dry the sweet potatoes. Cut them in half lengthwise and scoop out a bit of the flesh to create a hollow space for the filling. In a bowl, mix the black beans, red bell pepper, red onion, corn, cumin, smoked paprika, salt, pepper, and cilantro. Fill each sweet potato half with the bean mixture. Place the sweet potatoes on a baking sheet lined with parchment paper. Bake for 25-30 minutes, or until the sweet potatoes are tender. Top each sweet potato with avocado slices, salsa, and vegan sour cream. Serve hot.
