Tomorrow's breakfast: Apple, carrot, and raisin muffins. They have fruit and veggies in them! They're good for you! Apple, Carrot, and Raisin Muffins 1/2 cup raisins 1/2 cup hot water 2 cups flour 1 cup sugar 2 t. baking soda 2 t. cinnamon 1/2 t. salt 1 cup grated carrots 1 green apple, peeled, cored, and diced 1/2 cup sliced almonds 3 eggs 2/3 cup vegetable oil 2 t. vanilla Soak the raisins in the hot water, in a covered bowl, for 30 minutes. Drain thoroughly. Preheat oven to 350Β°F. In a large non-metal bowl, mix flour, sugar, soda, cinnamon, and salt. Stir in carrots, raisins, apple, and almonds. In a separate bowl, beat eggs, oil, and vanilla until well blended. Stir egg mixture into the flour mixture until just wet. Grease muffin pan with a little butter or line with paper cups. Divide the batter into the cups and bake for 20-22 minutes, or until golden brown.
