Banana cake with peanut butter frosting. In a medium bowl, sift together 320g flour, 2tbsp baking powder, 1 tbsp baking soda, 2 tbsp ground cinnamon and 2 pinch of salt. In the bowl beat with mixer 100g of white and 100g of brown sugar with 230g of butter until light and fluffy. Add in 1 tbsp vanilla extract and 2 eggs one at a time. On low speed beat in half the dry ingredients then the 130g sour cream and 4 overripe mashed bananas. Beat in the remaining dry ingredients and stir in one handful of chocolate chips. Divide the batter in two pans or place in one, butter and flour pans and bake the cake for around 40 minutes until the cakes are golden brown and pull away from the edges. For the frosting , in a bowl , beat with mixer 220g butter and 270g peanut butter on medium high speed until light and fluffy. Add 1 tbsp vanilla, pinch of salt and 300g powdered sugar and continue beating until the frosting is smooth and fluffy. After the cake is cool (I placed it in freezer for 30 minutes), assemble it and leave overnight to chill in fridge.
