Happy Sunday everyone!❤️ It is chilly out today, and all I want is a warm soup! What better way then to make your own homemade Thai Boat Noodle Soup! Actually, I’ve never had it before, and was curious what it tastes like!👍 The broth is quick and easy to make because I used my instant pot. First, I would recommend to oven roast the beef bones to dark brown, and for that I used oxtail because it is full of flavors! I also add in sliced beef shanks, spices (store bought pho spices and peppercorns), roasted whole yellow onion, 1 stalk of pandan Leaf (tied to a knot), galangal roots (3 thick slices), beef paste or broth, and fill it to the meat with water and pressure cook until ready, 40 to 45 minutes. When the broth is ready, remove the onion, and galangal roots then bring the pot to the stove and turn to medium low heat; skim off all the excess fat at the top. Add in a bit more water to the broth, if desired. Add in sugar rocks(2-3 Tbsp) for sweetness, salt, fish sauce, dark soy sauce for that deep brown color, a bit of oyster sauce(2 Tbsp), and then lower heat to a simmer for a bit more to incorporate all the flavors together. In the meantime, get all other ingredients ready: Soak thin rice noodles in warm water for 10 to 15 minutes. Rinse and cut side dishes: fresh herbs, veggies like Asian water spinach (Ong Choy), Yu-Choy veggies beef meatballs, bean sprouts, fried garlic, chili oil, lime wedges, and chilies, etc… One of the main ingredients used in this soup is raw pork blood, but because I am not a fan of it I didn’t use it. The raw pork blood helps to thicken the broth a bit more, too! However, I’ve simmered the broth long enough to thicken it just a bit that I was happy with it!
