Ingredients: 4 slices of bacon. 4 large eggs. 4 hamburger buns. 4 tablespoons of butter. 4 ounces of blue cheese, crumbled. Salt and pepper to taste. Optional toppings: lettuce, tomato, mayonnaise.
Instructions: Cook the bacon in a skillet over medium heat until crispy. Remove and drain on paper towels. In the same skillet, melt 2 tablespoons of butter over medium-low heat. Split the hamburger buns and place them face-down in the skillet. Toast until golden brown, about 2 minutes. Remove and set aside. In the same skillet, add the remaining 2 tablespoons of butter and melt over medium-low heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 2-3 minutes. Season with salt and pepper. Assemble the sandwiches: Place a slice of bacon on the bottom half of each bun, followed by a fried egg, crumbled blue cheese, and any optional toppings you like. Top with the other half of the bun, and your Fried Egg Sandwich with Bacon and Blue Cheese is ready to serve.
