Ingredients: 4 cups canned navy beans, drained and rinsed. 1 cup diced bacon. 1 cup diced onion. 1 cup diced bell pepper. 1 cup ketchup. 1/2 cup molasses. 1/4 cup Dijon mustard. 1/4 cup apple cider vinegar. 1/4 cup brown sugar. 1 teaspoon garlic powder. 1 teaspoon smoked paprika. Salt and pepper to taste.
Instructions: Preheat your smoker to 225F 107C. In a large cast-iron skillet, combine beans, bacon, onion, and bell pepper. In a bowl, mix together ketchup, molasses, Dijon mustard, apple cider vinegar, brown sugar, garlic powder, smoked paprika, salt, and pepper. Pour the sauce over the bean mixture and stir to combine. Place the skillet in the preheated smoker and smoke for 2 hours, stirring occasionally. After 2 hours, cover the skillet with aluminum foil and continue smoking for an additional 1-2 hours or until the beans are tender and flavorful. Remove from the smoker, let it rest for a few minutes, and serve hot. Enjoy your delicious homemade smoked baked beans!
