Try this tofu bacon version of the BLT sandwich for a vegetarian take on a classic dish. The tofu strips are marinated in a tasty mixture of soy sauce, maple syrup, and spices, which simulates the smoky, savory flavor of bacon. Together with ripe tomatoes, creamy cheese, and fresh lettuce, this sandwich makes a filling and healthy dinner.
Ingredients: 1 block extra-firm tofu, pressed and sliced into thin strips. 2 tablespoons soy sauce. 1 tablespoon maple syrup. 1 tablespoon liquid smoke. 1 teaspoon smoked paprika. 1/2 teaspoon garlic powder. 1/4 teaspoon black pepper. 8 slices whole grain bread. 4 lettuce leaves. 2 tomatoes, sliced. 4 slices cheese vegan or dairy. Mayonnaise or vegan mayonnaise, for spreading.
Instructions: Combine the soy sauce, maple syrup, smoked paprika, liquid smoke, garlic powder, and black pepper in a shallow dish. Make sure the tofu slices are evenly coated before adding them to the marinade. For optimal flavor, marinate for at least 30 minutes or overnight. In a skillet, preheat to medium. Slices of marinated tofu should be added and cooked for 34 minutes on each side, or until browned and crispy. Toast the bread slices until they turn golden. On one side of every slice of bread, spread mayonnaise. Arrange four slices of bread and top with lettuce, tomato slices, tofu bacon, and cheese slices. To assemble sandwiches, place remaining bread slices on top. Serve sandwiches right away after cutting them in half diagonally.
