For taco night, these Sweet Potato Tacos are a tasty and filling vegetarian option. Flavored just right, the roasted sweet potatoes go well with the black beans and fresh toppings, making these tacos much more tasty and healthy.
Ingredients: 2 medium sweet potatoes, peeled and diced. 2 tablespoons olive oil. 1 teaspoon chili powder. 1/2 teaspoon cumin. Salt and pepper to taste. 8 small corn tortillas. 1 cup black beans, cooked and drained. 1 cup diced tomatoes. 1/2 cup diced red onion. 1/2 cup chopped fresh cilantro. 1/2 cup shredded cheddar cheese optional. Sour cream and salsa for serving optional.
Instructions: Start by heating the oven to 400F 200C. Add the sweet potatoes dices to a large bowl. Add the olive oil, chili powder, cumin, salt, and pepper. Toss the potatoes until they are well covered. Place the seasoned sweet potatoes in a single layer on a baking sheet. Roast them in a hot oven for 20 to 25 minutes, or until they are soft and slightly crispy. Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until they are soft. Do this while the sweet potatoes roast. To make the tacos, put some roasted sweet potatoes on each tortilla and then add black beans, diced tomatoes, red onion, and fresh cilantro on top. Add shredded cheddar cheese if you want, and serve with sour cream and salsa. Have fun with your tasty Sweet Potato Tacos!
