If you, like me, grew up in New England eating Bickford's* apple pancakes and have spent your whole life trying to recreate them, this is the best recipe I've found:
Preheat oven to 425.
Put two tablespoons of butter in a pie plate and stick it in the oven to melt.
Mix together 1/2 cup milk, 1/2 cup flour, and two eggs.
Pour the batter over the melted butter in the pie plate.
Slice up an apple and arrange the pieces in the batter.
Mix 1/2 cup brown sugar and 1 tbsp cinnamon together and crumble over the apple and batter.
Bake for 15 minutes.
Broil for 30 seconds. (This seems like a pointless amount of time to broil but it caramelizes everything nicely and I think it's what gives it the quintessential Bickford's taste. If you broil it longer, I find it runs a risk of burning it, but ymmv.)
*Bickford's is one of those New England chains, like Friendly's and Christmas Tree Shoppe, that I can't understand why they're not still dominant forces in the region sigh
