Maharastrian Style Bharli Bhindi Recipe – Stuffed Bhindi With Coconut Maharashtrian Style Bharli Bhindi Recipe is a simple stuffed ladies finger with freshly ground Goda masala spices along with fresh coconut and coriander.
Everyday Meal Plate: Koshimbir, Bharli Bhindi, Usal, Phulka & Sheera Maharashtrian cuisines has dishes ranging from mild flavour to a high level of spices. Their staple food in their everyday diet are wheat, Jowar, Bajra, all sorts of vegetables and fruits. Apart from maharashtrian street foods like pav bhaji, misal pav and vada pav, the cuisine has lot to offer us on a meal plate.

A delicious Maharashtrian recipe that calls for eggplants!
INGREDIENTS
4 medium eggplant
2 onion
1 tomato
2 tsp red chili powder
Turmeric powder
Asafoetida
1 tsp jaggery
Cumin seeds
2 tbsp Roasted peanut
Oil
Salt
for Masala
2 tbsp Dry Coconut
1 tbsp Sesame seeds
1 tbsp Cumin seeds
10 Cloves of garlic
1/2 cup coriander leaves
INSTRUCTIONS
How to make masala
Grind dry coconut, roasted peanut , sesame seeds, cumin seeds, garlic cloves and coriander leaves and make fine paste and keep aside.
Then add coriander leaves and garlic and grind together and make a fine paste.
Chop tomato and onion.
Heat oil in kadai and add Onion and saute till it turn to saute onions translucent
Add chopped tomato and cook it.
Once onion and tomato are cooked add ground masala and mix it well.
Reduce the heat and add asafoetida, red chilli powder, turmeric powder, jaggery and salt to taste.
Mix well and remove from heat.
Allow it cool down.
How to make Bharli Vangi
Wash brinjals( Eggplants) and trim them & slit them into 4 without breaking them.
Stuff masala in all the brinjals.
Heat oil in kadai and add cumin seeds add stuffed brinjals and fry them till they change colour or until they turn light brown.
Add water in remaining masala and bring it to boil.
Add this water to the brinjals cook and covered for 10 minutes.
Remove form heat.
Garnish with chopped coriander leaves.
Serve with chapati or bhakri.

Ingredients:
10-12 Brinjals/ Vangi 3 Onions chopped 1/2 cup grated coconut 1/2 cup coriander 12 cloves of Garlic 1/2 inch Ginger 1/2 tsp Jaggery Salt to taste 2 tsp crushed Groundnuts 1 tsp Mix Masala 1/2 tsp Garam Masala 3-4 tbsp Oil
Method:
– Heat oil in a pan. Add mustard seeds, cumin seeds, coriander leaves, turmeric powder, chopped onions and mix everything well. Add salt and cover the mixture with a lid. – Slit the brinjals and keep them in water. – Add mix masala, jaggery, garam masala, grated coconut, coriander leaves and some water. Mix all the ingredients well and cover the mixture with a lid and let it cook for few minutes. – Fill the brinjals with coconut-coriander-green chillies-ginger-garlic mixture. Add the brinjals into the gravy. Cover it with lid and let it cook for 10-15 mins. Enjoy Bharli Vangi with chapati or bhakri.
