Ingredients: 1 lb beef sirloin, cubed. 2 cups long-grain rice. 1 onion, finely chopped. 3 cloves garlic, minced. 2 carrots, grated. 1 red bell pepper, diced. 1 cup frozen peas. 4 cups beef broth. 2 tablespoons olive oil. 1 teaspoon paprika. 1/2 teaspoon cumin. Salt and pepper to taste.
Instructions: In a large skillet, heat olive oil over medium heat. Add beef cubes and cook until browned on all sides, then remove from skillet and set aside. In the same skillet, add onion and garlic, cooking until softened. Stir in rice, paprika, and cumin, cooking for another 2 minutes. Add carrots, bell pepper, peas, and browned beef to the skillet. Pour in beef broth and season with salt and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes or until rice is cooked and liquid is absorbed. Fluff rice with a fork before serving.
