Banana marshmallows are a delightful twist on the classic treat. These soft and fluffy marshmallows have a subtle banana flavor that's perfect for snacking or adding to your favorite desserts. They're easy to make and sure to be a hit with kids and adults alike!
Ingredients: 2 ripe bananas, mashed. 3/4 cup granulated sugar. 1/4 cup corn syrup. 1/4 cup water. 3 tablespoons gelatin powder. 1/4 cup cold water. 1 teaspoon vanilla extract. 1/4 cup powdered sugar for dusting. Cooking spray for greasing.
Instructions: Put the vanilla extract and mashed bananas in a mixing bowl. Put aside. Combine the gelatin powder and 1/4 cup of cold water in a different small bowl. Give it five to ten minutes to bloom. Place 1/4 cup water, corn syrup, and granulated sugar in a saucepan. Stirring constantly, heat over medium-high heat until the sugar dissolves. After the sugar has completely dissolved, reduce heat, and let the mixture boil until a candy thermometer registers 240F 115C. Removing the syrup from the heat, slowly add it to the gelatin that has bloomed, stirring constantly until everything is well combined. Slowly pour the gelatin-syrup mixture into the banana mixture while whipping it on low speed using a hand mixer or stand mixer. After a few minutes, gradually increase the speed to high and whip the mixture until it gets fluffy and thick. To keep a square baking dish from sticking, coat it with cooking spray and sprinkle it with powdered sugar. Using a spatula, level the top of the marshmallow mixture after pouring it into the prepared dish. After 4-6 hours or overnight at room temperature, the marshmallows should become firm and lose their sticky consistency. Once set, use cookie cutters to cut the marshmallows into interesting shapes or slice them into squares. To keep the cut marshmallows from sticking, dust them with extra powdered sugar. Present your delectable marshmallows with bananas and relish!
