Kinda want to make bagels. I’ve never done it but I have poppy seeds (for me) and everything topping mix (for my sister) and all the ingredients I need. I’m going to ponder. Also it’s warm but not as hot as the last time I decided to bake on a whim.

Bagel morning
Set up:
It is easier if you have everything set up before beginning.
The dough is leftover bread dough from a yeast raised wheat bread I made 2 days ago. I pulled off a few lumps of raw dough, shaped it and left it in a covered dish in the fridge until I was ready to bake.
The baking tray is prepped with a pile of seeds for each bagel to keep them from sticking.
Also I have a slotted spatula, a pot of bagel bath, and a towel to drain the boiled rings on before going on the tray.
Simmer 30 sec each side in malt and brown sugar solution
Drain and put on top of seeds or cornmeal.
Bake in hottest oven, or under broiler, about 8 minutes.
Then flip, bake 1 to 2 minutes more until between 197F and 210F
Let cool. Eat.
Save cooled bath for next batch.
