Ingredients: 8 large scallops. 4 slices bacon, chopped. 2 tablespoons unsalted butter. 2 cloves garlic, minced. 1/4 cup white wine. Juice of 1 lemon. Salt and black pepper to taste. Chopped fresh parsley, for garnish.
Instructions: Use paper towels to dry the scallops, then season them with salt and pepper. While the pan is on medium heat, cook the bacon in large pieces until they are crispy. Take the bacon out of the pan and set it aside. The fat from the bacon should stay in the pan. Turn up the heat to high. Let the butter melt in the pan after you add it. Sear the scallops for two to three minutes on each side, or until they are golden brown and cooked all the way through. Take the scallops out of the pan and set them aside. Put minced garlic in the same pan and cook for one minute, until it smells good. Wipe out the pan with white wine and use a wooden spoon to lift any browned bits off the bottom. Put cooked bacon and lemon juice in the pan. Use a stir to mix. Put the scallops back in the pan and gently toss them around to coat them with the lemon butter sauce. Take it off the heat and add the chopped parsley as a garnish before serving.
