most people with sensory issues towards noise (i’m sure there’s a word for it) can’t stand loud noises, and can melt down in loud environments. but for me, if i’m in a really really loud room then i just disassociate. is that still the same type of thing? is there a word for that? maybe neurotypical people do this too?

It is still the same type of thing!
What you’re experiencing is a sensory shutdown; when your body is so overwhelmed by stimuli that it ‘shuts down’ (in your case, dissociates) so it can regulate itself and stop the stimuli from coming in.
