On limestone. In those cases where it is not clear whether or not it is in fact limestone, I pull out a jar of acid (labeled with a sad-face), drop some on the rock in question, and wait for it to erupt in bubbles.
I tried to pretend that I was unsure of every piece of limestone I found after that so I would have an excuse to drop acid on this REALLY big piece, but alas, the lab manager saw right through my shenanigans.
