aren’t there cultures who literally eat venomous snakes? I don’t think arbok has been stated to be both venomous and poisonous, so I think it’d be safe to eat once you remove the venom glands. it’s a cobra, not a tiger keelback, so it should only be venomous.
I'd say so as looking up 'rattlesnake recipes' came up with plenty of resources haha.

At first I thought about doing the same large scales I did on Ekans here but eventually decided against it. I wanted to make Arbok appear bigger and making the scales smaller hands itself to it, I think.
